Direct heat or offset?

A direct heat cooker puts the fire and the food in the same chamber. Tuning plates between the coals and the meat steer heat and smoke, so one pit can smoke low and slow, run like an offset or a reverse flow, or sear over live coals. Pick the Full Size for the most grate space and two fire drawers, the Mini for all seven cooking modes in a compact footprint, or the Slingshot for the lightest, most affordable pit. New to direct heat? Start with the direct heat smoker guide or compare all three in the buying guide.

An offset burns wood in a separate firebox and pulls heat and smoke across the cook chamber. The Liberty94 is a 94-gallon offset with a 24″ round firebox and a removable flow tuner baffle you slide to set even temperatures or two zones. It's a stick burner, so you tend the fire. That's the point.
