Yes. Build a fire in just one end drawer and run Offset or Reverse Flow on a single fire. Light both drawers when you need the full cooking space.
The Full Size has two fire drawers and 2,114 sq in of grate. The Mini has one center drawer and 1,246 sq in in a smaller footprint. Both get the same 7 cooking modes out of the box. See the Direct Heat Buying Guide for the side-by-side.
Covers are sold separately: the Full Size Smokeslinger Cover, or the Full Size Smokeslinger Cover with Counterweight if your pit has the lid counterweight.
Yes. Set up offset or reverse flow on one drawer and run a charcoal long-burn: minion (fill the drawer and light one corner), snake, or peg-leg, which runs about 5 to 6 hours at around 250°F before you add fuel. On wood, pull the insert so the fire gets less air, keep the splits small and stack them tight. A wood fire built on the insert runs hotter by design, around 275 to 325°F. Full setups are in our direct heat smoker guide.
No. A long-burn charcoal setup like minion or peg-leg holds a steady low temperature for hours on its own. If you already own a fan controller you like, the Fan Adapter Plate mounts it to the firebox door intake with no tools.
Yes. A whole turkey and bone-in hams (butt portion, shank portion or a whole ham) go on the lower rack. A spatchcocked or frogged turkey fits on the top rack, and so does a carving ham, which is a whole ham cut off along the bone, so it's whole muscle but boneless.
Yes. For super high heat searing, pull the inserts out of the drawers, set them channel-side up on a few tuning plates and build the charcoal right on them. Run both inserts for a wider sear bed. The lower grate sits about an inch above the coals. Stage the meat on the upper grate, then move it down to sear.
No harder than any pit. On low-and-slow cooks, a foil pan on the lower grate under the meat catches most of the drippings. After the cook, pull the grates, scrape the tuning plates in place, then pull the insert and scrape the floor into the drawer while the pit is still warm. Liquid grease runs to the bottom drain, so set a pan under it. A long-handled scraper saves your knees.
Bare steel will surface-rust if you ignore it. The finish is mill scale and boiled linseed oil, not paint, so a thin coat of linseed oil on the outside every so often keeps water off. Cover it only when it's cold and dry: a cover on a wet pit traps moisture against the steel. After rain, pull the cover and let it air out. Light surface rust blends back in with a stiff nylon brush and fresh oil.
The lid is two layers of steel with an air gap between them and a high-temp gasket, so the chamber holds its heat. Expect to burn more fuel and give it longer to come up. Owners have held 225°F with the temperature outside at 20°F.
Run the probe wires through the exhaust openings. There's no separate probe port, and you don't need one.
